Vanilla is a flavour/fragrance derived from a native plant of Mexico - an orchid of the Vanilla family. The name vanilla is derived from a Spanish word meaning 'little pod' - the part of the plant where the flavour/fragrance come from. Vanilla is the second most expensive spice after saffron, due to the labour intensive nature of its care and harvesting. Widely used in both commercial domestic baking - it is increasingly in use by fragrance companies.
